For those who like a litle sweetener in placeof sugar, consider using maple syrup. It is a natural sugar collected from maple trees in the northeastern United States and in Canada. The weather and soil conditions here are conducive to tapping some varieties of maple trees and extracting the sweet sap that begins to flow in the early spring (usually around February) and continues for a few months (generally ending in early May).
While maple syrup is high in sugar content and should be used in moderation, it does have the advantage of containig minerals and small amounts of some amino acids. Minerals found in the syrup are potassium, calcium, magnesium, manganese, phosphorous. Granulated sugar (sucrose) has no mineral content.
Maple syrup comes in Grade A and Grade B. Unlike most other products where Grade A is usually considered best, the reverse is true with maple syrup. Grade B is the superior grade as it contains higher levels of mineras due to its beng collected later in the season after the more watery Grade A has been collected.
